This is such a tasty salad. I make it regularly. I find it addicting!
1 bag of baby spinach
1/2 cup of green onions
3 stalks sliced celery
1 cup fresh sliced mushrooms
1/2 lb. bean sprouts
2 cups cold cooked rice (I use brown rice)
Mix all of the above together, 1 hour before serving add 1 cup of cashew nuts (you can add any nuts --- even sunflower seeds) and dressing.
DRESSING
1/2 cup of oil (I use olive oi or canola oil)
1/4 cup reduced-salt soy sauce
1 to 2 cloves of crush garlic (I love garlic so I put in alot more)
Mix all of the above in a jar with a lid, shake well and refrigerate till needed.
