Tonight we had wraps for supper with leftover turkey (we roasted a full turkey yesterday). The Ceasar dressing is made with avocado and fat-free sour cream. Here is the recipe.
1 avocado (rippened and soft)
8 cloves of crushed garlic (more/less depending on how garlicky you want it)
1 tsp. mustard
1/2 cup (approx.) of fat-free sour cream or you can use plain yogurt
lots of pepper or peppercorns
parmesan cheese (amount depending on your taste)
Put all ingredients in a blender .... add some milk to to get the right creamy texture.
Steam asparagus. Chop into 1 inch pieces.
In a big bowl, chop up turkey, add a diced onion, chopped asparagus and grated cheese (I used old cheddar). Add avocado dressing and stir. Fill your wraps. Then grill.
I used my George Foreman to grill them, which keeps them sealed and cheese melted inside.
