Portabella Mushrooms are a nice alternative to a meat burger. They're an excellent source of Niacin and a good source of potassium and selenium, as well. You can grill them or bake them. I baked mine, brushed with olive oil and used whole wheat English muffins for buns and melted cheddar cheese on top. As a side dish I made rutabega fries, steamed broccolli and leftover cabbage roll casserole from the night before.
