These cookies can be made in a pan as granola bars.....but I prefer them into cookies as a quick healthy snack.
In a large bowl I mixed:
2 cups of spelt flakes
1/4 cup of ground flaxseed
1/4 cup of wheat germ
1/2 cup of unsweetened coconut
1/2 cup of coarsely chopped almonds
1/2 cup of raisins
rind of lemons and oranges
cinnamon
In another bowl I mixed:
1 egg
1/4 cup of natural peanut butter
1/4 cup of unsweetened apple sauce
I added this mixture to the dry ingredients and then added enough milk and orange juice to be able to mix it and drop by tablespoon full on a lightly greased pan.
Bake at 350 degrees F. for about 1/2 hour.
You can add anything you want to this recipe. If you prefer sweetness, you can add honey, mollasses, etc. Anything goes!
