Applesauce Bran Loaf (Low Fat)

1 cup whole wheat flour
3/4 cup natural wheat bran
1/2 cup brown sugar (not packed)
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 egg, lightly beaten
1 cup unsweetened applesauce
1/2 cup plain fat-free yogurt
2 tbsp. oil

Preheat over to 375 degrees F.  Spray 8" x 4" inch loaf pan with cooking spray or brush with oil.

In large bowl, whisk together flour, bran, brown sugar, cinnamon, baking powder and baking soda.  In another bowl and using a wooden spoon, stir together egg, applesauce, yogurt and oil; stir into bran mixture just until moistened.  Do not overmix.  Pour batter into prepared loaf pans.

Bake in center of oven for 35 to 40 minutes or until tester inserted in center comes out clean.  Cool in pan on wire rack for 10 minutes.  Remove from pan to cool fully.
