Applesauce Bran Loaf

1 cup whole wheat flour
3/4 cup natural wheat bran
1/2 cup brown sugar
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 egg, lightly beaten
1 cup unsweetened applesauce
1/2 cup low-fat plain yogurt
2 tbsp. oil

  1. Preheat oven to 375 degrees.  Lightly grease 8 x 4 inch (1.5 L) loaf pan.
  2. In large bowl, whisk together flour, bran, brown sugar, cinnamon, baking powder and baking soda.  In another bowl and using a wooden spoon, stir together egg, applesauce, yogurt and oil; stir into bran mixture just until moistened.  Do not overmix.  Pour batter into prepared loaf pan.
  3. Bake in centre of oven for 35 to 40 minutes or until tester inserted in centre comes out clean.  Cool in pan for 10 minutes.  Remove from pan to fully cool.
I reduced the sugar amount when I made this recipe.  It's really good!
