I made this for supper tonight. I didn't want to fry the fish....so I tried battering it and oven baking it. It turned out good.....but next time I make it, I will use a 500 degree oven to make it crispier. I had my oven at 400 degrees.
For the batter, I whisked:
1/2 cup of beer
2 egg yolks
1/2 cup of whole wheat flour
1/2 cup of rice flour
and lots of spices (smoked paprika, pepper, garlic, parsley)
Then I folded in 2 beaten egg whites (beat till it formed stiff peaks like meringue). Then I coated the fish.
The oven fries are sweet potatoes, red potatoes and white potatoes coated with a bit of olive oil, pepper and smoky paprika. A much lower fat version of regular fries...and so good!
