Tuna Potato Corn Chowder

The weather turned out to be dreary and rainy after our morning walk so I felt a bowl of homemade soup would go well on a day like this, so I made this one......we loved it!

2 1/2 cups diced potatoes
2 cups chicken broth
2 onions, chopped
1/4 teaspoon sage
1/4 teaspoon paprika
1/8 teaspoon pepper
2 carrots, sliced
2 stalks of celery, sliced
1 cup of frozen corn (or you can use a can)
a handful of chopped spinach
3 cups skim milk
1 can chunk tuna in water -- drained and flaked

In a large saucepan, combine 1 cup of the potatoes, chicken broth, and 1 onion. Bring to a boil. Reduce heat and cover. Simmer for ten minutes or until potatoes are tender. Mash the potatoes and add the spices.  Then add the remaining potatoes, carrots, celery, corn, spinach and milk to the mashed potatoes. Bring just to a boil. Reduce heat and simmer for 15 minutes or until vegetables are tender. Add tuna. Simmer five minutes more.
