Healthy Tortillia Bean Bake

We had this for supper last night. It's the second time I make it.  We really like it.  You can actually use anything to fill the tortillas.  I made my vegetarian and this is what I used.

Filling

3 diced onions
1 diced green pepper
1 diced red pepper
3 cloves of minced garlic
1 diced carrot
1 diced stalk of celery
1 can of mushrooms (or fresh)
1 can of kidney beans, drained (any beans would do)
1 1/2 cups of frozen corn
3/4 cup of salsa sauce
2 tsp. chili powder
2 tsp. black pepper
1 tsp. cumin
1 tsp. oregano

Homemade or your favorite canned tomato sauce can be used for the topping.

Cook onions, green pepper, carrots, celery, garlic and spices over medium heat, until softened.  Add mushrooms, corn, beans and salsa sauce and cook 5 more minutes.

To assemble your wraps, spoon filling down center and then sprinkle with cheese.  Brush bottom of baking pan with tomato sauce.
Roll up and place seam side down in a baking pan.  Cover with tomato sauce and grated cheese.

Bake at 350 degrees F for 25 to 30 minutes, covered.  Remove cover in the last 5 minutes of cooking.
