I use rice crust for all my pies now. This time I made an apple pie. So easy. I prepared the rice crust, like usual. This time I used red rice. I spiced it up with various apple spices (cinnamon, nutmeg, cloves).
I sliced 4 apples thinly in the food processer. In a large bowl, I added the apples and mixed in about 1/2 cup of oats, zest of one lemon, handful of raisins and more apple spices. I baked it at 350 degrees for about 1/2 hour, until the apples were softened. Covering it with tin foil for a bit will prevent the apples and raisins from burning on top. I didn't do that...but next time I will.
