Black Rice Cabbage Soup

I made this soup yesterday using black rice.  I've never used black rice in a soup before.  I will definitely use it again and again.  It has a nutty taste....very flavourful.  It's high in antioxidants and contains 18 amino acids, iron, zinc and many other healthy vitamins.


2 onions, chopped
1 or 2 stalks of celery, chopped
3 or 4 carrots, chopped
2 cloves of garlic, or more
chopped cabbage
3/4 cups of black rice
spinach
1 small can of tomato paste
spices of your choice
8 cups of water, or amount needed for the size of your pot


Saute the onions, celery, carrots and garlic in a bit of oil.  Add the chopped cabbage, water and tomato paste along with spices. Then add the black rice and bring to a boil.  After it reached the boiling point, add spinach and adjust your seasonings to your desire and then simmer covered for about 1/2 hour.


So easy and so good!
