Healthy Nachos For Lunch

This afternoon I made individual nachos in pie plates for me and my boyfriend for our afternoon snack.  I figured if we each had our own personalized dish, the greed wouldn't set it -- my boyfriend's greed, that is lol.  I wanted to use up some vegetables we had in the fridge.  I used an onion, green pepper, red pepper, onion, avocado, tomato, red lettuce all chopped up on top of multi-grain flax seed tortilla chips.  I grated both cheddar and provolone cheeses on top and broiled it in the oven for about 5 minutes or so, then added no fat sour cream on top.  What a yummy treat and a good way to get some veggies in your diet.  Good snack for kids too!
