I made this quick cake by throwing in different grains for the crust mixed with one egg, milk, cinnamon, coconut flour and shredded coconut. Bake in a 350 degree F oven for about 20 minutes. After it was cooled a bit, I spread a layer of 100% pure peanut butter on top along with a layer of walnut pieces and unsweetened coconut. For the top layer I used Dr. Oetker's low fat chocolate mousse (made with skim milk). In the mousse I stirred in some coconut and more walnuts. Sooo good!!
