Low-Fat Cream of Cauliflower, Carrot, Spinach Soup

This is a very easy homemade soup and so wholesome tasting.  It's especially good on a cold wintry day.


1 onion, chopped
2 stalks of celery, chopped
1 large carrot, chopped
5 cloves of garlic, chopped
1 head of cauliflower, chopped
1 cup or more of spinach
curry powder
pepper
parsley
grated Parmesan cheese, to taste
water
milk


Saute the onions and celery in a bit of oil for about 5 minutes, then add the garlic and carrot for a few more minutes. Add the chopped cauliflower and add enough water to cover the mixture. Add your spices. Bring to a boil and then turn down the heat to simmer until the cauliflower is softened.  Let it cool down a bit and then puree it till its fairly smooth.  Return pot to the stove and add your spinach and cook at medium-high heat for about 7 minutes.  Then add enough milk and Parmesan cheese to your desired thickness and taste.  Heat this on medium , but don't boil.   Enjoy!
