Lentil Vegetable Soup

A hearty bowl of Lentil Soup sure is good on a cold winter day.  Lentils are high in fiber, folate, magnesium, iron and protein.  They are great for vegetarians or people who do not eat alot of red meat because protein makes up 26% of the calories in the lentils.

In this soup there is onions, garlic, carrots, celery, potatoes, a can of diced tomatoes and water, 1 cup of lentils and egg noodles. 

Saute your veggies, add the tomatoes and enough water to fill your pot.  Add the lentils and bring to a boil and then simmer until the lentils are softened (about 1/2 hour or so).  Add the noodles towards the end as they cook quickly.
