Mung Bean Vegetable Soup


We've tried Mung Beans for the first time yesterday.  I decided to make Mung Bean Vegetable Soup.  It looks like Pea Soup but has a slightly different taste.  They are high in protein, higher than alot of other beans.  Also, high in iron and fiber as are most beans.

I simmered this soup for about 45 minutes and the Mung Beans were softened.  I thought it would take longer to cook.  If you like Pea Soup, you'll like Mung Bean Soup.
