Quick Black Bean Soup

I made this quick soup this afternoon.  Fast and simple.  It brought back memories of a soup we had while vacationing in Cuba and Dominican.

Saute one chopped onion, 2 stalks of chopped celery and 5 cloves of garlic in coconut oil or canola oil (or whatever oil you normally use).  Add cumin, pepper, parsley, garlic powder and some turmeric or curry spice.  After lightly browned, add one can of black beans (rinsed), one small potato chopped and about 2 cups of no-salt added beef broth.  Bring to a boil and then simmer until all veggies are softened.  Let cool a bit and puree it slightly.  Add more spices as needed.

Yummy!! If you like black beans.
