Black Bean Tortilla Lasagna

I made this yesterday for supper. Super fast and easy.  I mixed a can of black beans and a can of tomatoes in a big bowl.  Then I added chopped mushrooms, green pepper, red pepper, onion, tons of garlic, corn, celery and different spices and 1/2 a container of cottage cheese.  Then I layered this mixture between whole wheat tortillas and added parmesan and cheddar cheddar cheese between each layer.  Baked for about 45 minutes at 375 degrees F.

I love this recipe and make it regularly with different beans. It's a recipe that can be whipped up so fast and it's a good way to get your bean fix.
