Roasted Sweet Potato Salad

I made this salad last night.  The roasted sweet potatoes gave it such a good flavor.  I thinly sliced them and roasted them coated with canola oil, lots of garlic, pepper and paprika at 425 degrees F. until they were crispy.  Meanwhile I prepared the rest of the salad.  This one has romaine lettuce, radishes, Vadalia onion, red pepper and an avocado.  I used a mandarin poppy seed dressing. Yummy!!
