Vegetable Barley Soup turned into Stew

I made this barley soup yesterday but I simmered it too long and the broth evaporated so I decided to make it a stew instead lol.  The taste is still all there. I used a mixture of veggies....some from my garden and some store bought.

Barley is a hearty and nutritious grain.  I love the texture. Here are some of the nutrients it contains.
